Delicious Rice and Spaghetti Jollof

Truth be told, I am a heavy rice eater (any kind of rice and not just brown rice). I have a thing for rice and another for Spaghetti. And so when the opportunity presented itself and I started to crave rice and spaghetti at the same time, I decided make this delicious rice and spaghetti Jollof recipe. This jollof recipe is not only unbelievably easy to make, but also very delicious and healthy-ish. It is a perfect recipe to make when you are in and out all the time. It is great recipe to use as leftovers for when you want a quick lunch or dinner.

This Rice and Spaghetti Jollof recipe is not a 15-minute throw in the ingredients and toss in the rice kind of recipe. It requires a little bit of preparation and wait time. This is all due to the wait time involved in cooking the rice. However, the time you invest in making this Jollof recipe is soo worth it.

Ingredients

  • 2 cups rice (I used white rice. You may use brown rice since it has more nutrient and fiber)

  • 1 pack angel hair spaghetti

  • 2 medium tomatoes (chopped)

  • Crushed Tomatoes (I used the whole 28 ounce can)

  • 1 medium onion (diced)

  • Oil of choice ( I used peanut oil)

  • Garlic gloves ( minced), Paprika or cayenne pepper,

  • Vegetable or Chicken broth

  • Protein of Choice ( I prefer Chicken or Fish- feel free to use any protein source you like)

  • Diced Carrots and Celery

  • Cumin powder, all purpose seasoning, and salt to taste
    Curry powder (optional)

Instructions

  • Heat oil in a medium sized pan and add tomatoes and onions and allow to cook for about a minute
  • Add in your crushed tomatoes, minced garlic, paprika, cumin powder, curry powder, all purpose seasonings, and allow to cook for about 3-4 minutes whiles stirring.
  • Now, add protein (chicken or fish will add more flavor to the dish, however any protein option is just fine) and simmer for about a minute or longer
  • Add broth and water to equal the water to perfectly cook the rice and spaghetti. 1 cup of Rice = 1 cup of Water + Broth
  • Add carrots, celery and salt to taste.
  • Cover and allow to come to a boil. I prefer to let it boil for about 3-5 minutes so that all the flavor is absorbed
  • Now, you may add your rice and spaghetti and then stir, cover and reduce heat to medium-low to prevent burning.
  • Cook for few minutes or until semi-cook, then cover with foil paper.
  • Now, reduce heat to low (enough to not burn food) and allow rice and spaghetti to cook through for about 7-10 minutes.
  • Remove cover and foil, test rice for doneness and serve alone or with your favorite green salad.

Notes

  • If you want the spaghetti to be al-dente, add only rice in step 7 and allow to cook until semi-tender, then add your spaghetti. Make sure the liquid is not completely absorbed though.
  • If the liquid is completely absorbed and jollof is not cooked through and tender, you may drizzle just a bit of water, stir and cover with foil and allow to simmer until tender.
