Easy and Healthy Shrimp Fried Rice

This healthy shrimp fried rice is a game changer. Truth be told, restaurant and fast food joint Shrimp fried rice taste soo good and smell great.

I was a huge fun of fried rice until I realized how fast food joint prepare their food with seasonings. These seasonings surprisingly, contain unnecessary and unhealthy ingredients that can have some serious effect on my health.

Naturally, I decided to create my own healthy shrimp fried rice. This is nutrient-dense and just as good and delicious without all the negative side effects of the ingredients. And above all, it is nutritiously delicious and kids-friendly.

This shrimp fried rice recipe has the most amazing mixture of flavors. For example, ginger, garlic, spices and mimic those heavenly aromas of the restaurant version. Super delicious and full of flavor.

A perfect vegetable-packed meal, this recipe is easy and quick to make. It require minimal kitchen utensils so cleaning up is a lot easier.

NOTE: To cook the rice, bring broth/water to a boil. (If using broth make sure to taste so to adjust salt accordingly.) Add 2 cups of rice, stir and reduce heat to medium. Allow to cook until rice is tender.

For a better result of the rice cooking faster and evenly, cover the rice with aluminum foil to trap steam before covering with lid.

Ingredients

  • 2 cups rice (cooked with chicken or vegetable broth)

  • 2 tablespoon coconut oil

  • 1/2 cups frozen green peas

  • 1/2 cups grated or diced carrot

  • 1/2 cups sweet yellow corn – I used canned

  • 2 eggs

  • 2 cups fresh Jumbo shrimp, cleaned

  • 1 medium yellow onions, diced or chopped

  • 4 cloves garlic, grated

  • 2 thumb piece ginger, grated( Divide into 2 parts for the shrimp and the rice)

  • Chopped parsley, ground cumin and Salt to taste,

Directions

  • Prep your vegetables. Grate carrots, mince garlic, grate ginger, rinse peas and set aside
  • In a large skillet/pan, saute shrimp with 1/2 tablespoon coconut oil, minced garlic, 1/2 part of the grated ginger
  • Crack open the eggs and add to skillet, stir and allow to cook for about a minute
  • Add in the vegetables, mix together and let it cook for a minute
  • Add in your cooked rice, chopped parsley, ground cumin and salt to taste. Mix all together and cover for about 2-3 minutes at a low heat.
  • Remove from heat and serve
