How to Make Jollof Rice with LeftOver Stew

This Jollof Rice recipe is very simple to make and takes about 20minutes if you have leftover stew. It is not only unbelievably easy to make, but also very delicious and healthy. However, if you need to make your stew base from scratch, then plus the time it takes to make the stew, your estimated time might be longer.

This is a perfect recipe to make when you are in and out all the time and need something that’s not only quick but delicious and healthy. You may adjust it to your liking by adding chopped vegetables like carrot, spinach, cabbage, red peppers and green peppers.

So this recipe is made from leftover stew and didn’t require making the stew base from scratch. However, I will share with you how I make this recipe from scratch. I know this will come in handy someday.

MAKING JOLLOF RICE WITH LEFTOVER STEW

To make this Jollof rice with leftover dish, you may want to revamp the flavor of the dish by adding all the ingredients in the recipe card. If you know that the flavor of the leftover stew base is adequate enough to make the leftover stew Jollof rice dish flavorful and delicious, you may skip adding all the ingredients and just add water or broth, your shrimp or choice of protein, salt to taste, and rice.

Let it cook for about 15 minutes under low to medium heat, cover with aluminum foil and allow to cook under low heat or simmer until rice becomes tender.

This is a short cut to the full version of the actual recipe. I skipped the process involved in making the stew base for the dish. Very adaptive west African Dish that will never disappoint. Making this means you have food ready in the refrigerator whenever you want.

Ingredients

  • 2 cups rice, watched and strained. (I used white rice. You may use brown rice which has more fiber and nutrients that white rice)

  • Oil of choice (Olive oil is preferred)

  • 2 cups vegetable or chicken broth. You can skip this and use water if your stew base is rich and has adequate flavor

  • Jumbo Shrimp (cooked or fresh).

  • 1 medium onion (diced)

  • Garlic gloves (minced). Paprika or cayenne pepper, Dried or fresh rosemary

  • Cumin powder, all purpose seasoning, salt to taste.

Directions

  • Heat oil (about 1 tablespoon) in a medium sized pan, lightly saute diced onions and add leftover stew.
  • Add seasonings, pepper, salt, rosemary, cumin powder and minced garlic. Mix all together and let it simmer for about 3 minutes.
  • Add shrimp. If you are using fresh shrimp, let it cook for about 5 minutes to make it tender.
  • Add 2 cups of broth or water. Cover and bring to a boil. Let it boil for few more minutes (about 3 minutes after it starts boiling)
  • Add rice, stir, cover and let it cook for 4 minutes under low-medium heat.
  • Give it a good stir, cover with aluminum foil and then with your saucepan lid. Ensure it is covered nice so rice can evenly cook through
  • Reduce heat to low and allow to cook for another 5-10 minutes.
  • Check doneness. Serve with saute vegetables and enjoy.

Notes

  • If the liquid is completely absorbed and jollof is not cooked through and rice is tender, you may drizzle just a bit of water, stir and cover with foil and allow to cook under low heat until tender.
