Peanut Butter Chia Pudding with Stewed Berries

This simply delicious Peanut Butter Chia Pudding is a refreshing, delicious and nutritious recipe that is sure to keep you feeling fuller and satiated for longer. Chia pudding is great as breakfast, dessert or as any meal of the day. I mostly enjoy it as breakfast or dessert. I love the flavor of peanut butter in this recipe. coupled with the tartness and tanginess of the stewed berry compote takes this chia pudding recipe to a different level. You may use frozen or fresh mixed berries to make the compote and sweetened with honey.

What is Chia Pudding?

I get asked this question a lot so I decided to write a post on the health benefits of the amazing seeds that are not only delicious, but also are omega-3, protein and fiber-rich superfood. You can read about it here.

So now let’s talk about our main post; Chia Pudding. Chia Pudding is pretty much how it sounds. It is pretty much pudding made from Chia Seeds. There are several ways to make Chia pudding. Adding some toppings like fruits, nuts and seeds make it even more delicious and nutritious. Adding fruits gives it a little dose of antioxidants and vitamins. Nuts and Seeds also add to the minerals, protein and healthy fats to make this Chia Pudding more feeling, delicious and nutritious.

I like to use warm milk to make my chia pudding. It helps to give it more of a refreshing taste and also soften the seeds a little. If you find it too grainy, try blending it before letting it sit. I used honey to sweeten it, however you are welcome to use other sweeteners like maple syrup, stevia or cane sugar. To make it vegan, you may eliminate honey and use full fat coconut milk or other nut milk instead of whole cow’s milk

Chia Pudding is one of my favorite go-to breakfast these days. I try to find ways to make different varieties and toppings each time I make it. Nutritionally, Chia seeds are gluten-free, high fiber, high protein and low calorie food.

Ingredients

  • 1/2 cup milk

  • 2 tablespoon Chia Seeds

  • 1 tablespoon Honey

  • 1 tablespoon Peanut Butter

  • Mixed Frozen Berries

  • 1 tablespoon Hemp Seeds

  • Shredded Coconut

Directions

  • Warm milk to desired temperature and add chia seeds, hemp seeds and peanut better and stir together.
  • Add honey or any sweetener and mix immediately
  • Allow to sit for about 15-30minutes (you may also let it sit in the refrigerator overnight for a more gel consistency
  • To make the Stewed Berry
  • Heat berries on a low to medium heat whiles stirring every now and then for about 5minutes.
  • If desired, you may add honey, maple syrup or any type of sweetener
  • Reduce heat to low or simmer and allow to simmer for about 5minutes
  • You may add stewed berries to pudding right away or allow to cool and add desired amount to your pudding.
  • Top with shredded coconut and Serve.

Halima’s Tips

  • I find chia pudding more refreshing and easy to swallow if I make it warm or when I blend it. You may refrigerate your pudding if you like it cool or chilled as many people like to let it sit in the refrigerator overnight and serve it cool.
  • You may use more milk and sweetener if you find the pudding too thick and not sweet.
