As the warmer weather approaches, I know this veggie shrimp salad will be a perfect nutritious and easy to put together recipe to add to your recipe portfolio.
Ingredients For Roasted Shrimp and Veggie Salad
This Salad starts with a base of vegetable spring mix or romaine lettuce. If you are using romaine lettuce, it is best to wash, chop and pat dry the lettuce with paper towel so your final salad will not be too wet and watery.
- Shrimp – Saute the shrimp in extra virgin olive oil, minced garlic, cumin seeds, freshly squeezed lemon juice. and salt.
- Assorted Peppers – Red, yellow and orange peppers.
- Cherry Tomatoes – About a cup of sweet cherry tomatoes.
- Red Onions – Thinly slice or chop the red onion for a mild onion flavor, pop of color and off course nutrients.
- Carrots – Grate or shred the carrots
- Spring mix herbs or Romaine Lettuce – Place the lettuce or greens in a large bowl then layer with the rest of the ingredients.
What Makes This Roasted Shrimp Veggie Salad Healthy?
And as you may already know, vegetables have abundant amount of antioxidants, chlorophyl, phytonutrients and are low in calorie. This salad is a combination of greens and vegetables that are high in nutrients like folate from the spinach and arugula, vitamins from the peppers and tomatoes, healthy fat from the olive oil, and good quality protein from the shrimp.
Almost all the ingredients used in this recipe have some amount of vitamins or mineral. The shrimp is great source of protein especially for vegetarians and people who want to reduce their meat intake. Again, making use of seasonal produce makes it even better because foods that are in season are usually at the peak of ripening and are high in nutrition.
Can I use already Cooked Shrimp?
Absolutely. You may use cooked frozen shrimp. However, to get the best tasting shrimp, it is best to saute it following this recipe’s direction.
How Long Will This Roasted Shrimp Salad Last Without Refrigeration?
Once you add the dressing in, it should be enjoyed within 4 hours. Be sure to refrigerate any un-eaten portion or leftovers. The salt in the dressing will actually soften the lettuce and other vegetables in the salad, so they won’t be as fresh and crisp if you try to store it with the dressing on. It is best to not add the dressing to the whole salad if you know you won’t be enjoying the entire bowl right away, or at least 4 hours. Best to add the dressing to the the portion you are going to eat.

The salad dressing calls for freshly squeezed lemon juice, rice vinegar, olive oil and a pinch of salt which is optional. This combination of flavors does not only give the salad great flavor but also makes each bite taste like you are having a summer party in your mouth.

Roasted Shrimp and Veggie Salad Recipe
Equipment
- Mixing or Salad Bowl
- Non-stick pan
- Grater
- Whisk or fork
- Mason jar or cup
Ingredients
Ingredients for Shrimp
- 1 lb Jumbo Shrimp peeled and deveined
- 2 Cloves Garlic minced, pressed or grated
- 1 tablespoon extra virgin olive oil
- Pinch of Salt
Ingredients for Salad
- 4-5 cups Spring mix herbs
- 1 cup cherry tomatoes
- 1/2 medium red onion thinly sliced or chopped
- 1 large red pepper sliced lengthwise
- 1 large yellow pepper sliced lengthwise
- 1 large orange pepper sliced lengthwise
- 2-3 medium carrots shredded
Ingredients for salad dressing
- 1 tablespoon rice vinegar
- 2 tablespoon extra virgin olive oil
- 1/2 teaspoon parsley flakes
- Pinch of salt
Instructions
How to the Veggie Shrimp Salad
- Wash and pat dry shrimp with paper towel. Add olive oil to pan over medium high heat and add minced garlic, cumin seeds and shrimp to pan. Cook for about 1 minute and add lemon juice and salt. Turn shrimp around and cook for about 1-2 minutes on each sides or until cooked. Transfer to a plate and set aside to allow them cool down enough to not wilt the salad greens.
- Chop the red onions, shred the carrots and slice the peppers. In the same pan, with or without additional oil, add the yellow, red and orange peppers and saute for 1 minute and turn off the heat. Remove pan from heat and add the cherry tomatoes and set aside.
- Add the salad greens in a large mixing bowl, and add the diced red onions, shredded carrots, sauted peppers and cherry tomatoes and shrimp.
- To make the dressing, add rice vinegar, olive oil, a pinch of salt and parsley flakes(optional). Whisk the mixture together until it becomes thick or emulsifies evenly. You can also use a mason jar and in the case you put the lid on and give it a good shake. Add the dressing to salad and stir that together. It is best to add the dressing when you are ready to serve.
- Serve over rice, croissant or as sandwich.
