This recipe is as easy as it could be and each muffin is nutritious and balanced-pack in every bite. Great if you want to make ahead of time, refrigerate or freeze for later. They microwave well too.
Step by Step of How to Make Healthy Applesauce Raisins Muffins
Mini Applesauce Raisins Muffins

1/2 cup unsweetened applesauce
1/2 cup unbleached all purpose flour
1/2 cup rolled oats
1/2 cups grated apple
1/2 cup whole milk
1 egg
1 tablespoon coconut flakes
1 teaspoon hemp seeds
Raisins ( use as much as you like)
1 teaspoon baking powder
1 teaspoon cinnamon
Directions
- Preheat oven to 350 degrees F and grease muffin tin pan with butter.
- Lightly beat egg in a small bowl. Add applesauce and mix.
- Add flour and oats and mix all together
- Add the rest of the ingredients leaving out baking powder and coconut flakes for the last and mix well.
- Now add baking powder and mix
- Scoop out prepared batter into muffin tins. Try to fill up the tins to the edge.
- Sprinkle coconut flakes on top of scooped batter and bake for about 20 minutes or until light browned. You may also test for doneness with a chopstick by inserting in the center of muffin. If the chopstick comes out clean it means muffin is well done.
- Remove pan from oven and allow to cool for few minutes. Remove muffins from tins and transfer to a cooling rack to further cool.
- Serve warm with milk or any beverage of choice.
HALIMA’S TIPS
- The sweetness of the grated apple and raisins will do just fine. You may add 1 teaspoon honey if you want your muffins to be more sweet.
- Adding the baking powder last creates air bubbles and makes the muffin fluffier
